Leatherwood
Honey has a distinctive spicy flavour with a unique sweet floral aroma
and a complex aromatic palate that lingers. This quality honey has a bright
golden colour with low moisture and a balance of sugars. Unlike blended
honey, Leatherwood honey has a reputation as a fine gourmet product both
in Australia and overseas.
Our Leatherwood Honey is derived from pollen, naturally gathered by bees from Leatherwood trees and shrubs in the Echo Forest of Tasmania. These under-story areas of rainforest contain a natural abundance of the extremely delicate white flowers with a fresh piquant scent. The resulting honey is free of artificial insecticides and pesticides, is allergen and gluten free, and has no additives. Known as Eucryphia lucida, the Leatherwood tree is so named because of the leathery texture of its leaves.
Leatherwood Honey is known to contain Antioxidants, some only found in honey, which include pinobanksin, chrysin, catalase and pinoicembrin. As well as high traces of protein, riboflavin (Vitamin B2), niacin (Vitamin B3), pantothenic acid (Vitamin 5), Vitamin B6, folate (Vitamin B9), Vitamin C, calcium, iron, magnesium, phosphorus, potassium and zinc.
Leatherwood Honey is uniquely flavoured honey of the highest quality. Direct from the Wilderness areas of Tasmania, the honey is free of artificial insecticides and pesticides, is allergen and gluten free, and has no additives. Honey is known to have a mild antibacterial effect and has, in the past, been used as a salve for burns and an antiseptic for cuts. Leatherwood honey may be used for a variety of purposes.
Research by the University of Queensland's Australian Honey Research Unit has discovered evidence that Australian floral honeys, like Leatherwood, also contain significant levels of polyphenols, thought to play important roles in cancer prevention, anti-inflammation and antioxidative processes.
Unblended Leatherwood honey has a unique taste and aroma which is quite different from that of blended honey and to many people consider it an acquired taste, some people swear by it others swear about it. This distinctive spicy flavour has made Leatherwood honey a reputation as a fine gourmet product both in Australia and overseas. Leatherwood honey may be bought either in its normal form or as a creamed (aerated honey).
Honey is composed of two main sugars levulose and dextrose which are easily absorbed and used by the body, there are also many other minerals and vitamins in small quantities which give the honey its colour, flavour and physical properties.
